Vegan Pea Soup
 
 
Ingredients
  • 2 cups split green peas
  • 1 onion, diced
  • 3 large carrot, diced
  • 6 ounces mushrooms, quartered
  • 1 large baking potato, diced
  • 1 bunch spinach, chopped
  • 1 cup nutritional yeast
  • 1 tablespoon vegetable base
  • 8 cups water
  • 2 tablespoons regular or vegan butter
  • ¼ cup apple cider vinegar
  • 3 bay leaves
  • 2 tablespoons vegan liquid smoke
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne
  • 1 tablespoon garlic powder
Instructions
  1. In a large pot, combine all the ingredients and mix well. Bring to a soft boil, reduce heat to low and simmer uncovered for 2 hours stirring occasionally to prevent bottom from burning. It will thicken nicely but if it's too thick for you, do add more water as needed. This soup is so simple and even better the next day.
