Cauliflower, Purple Potato, & Kimchi Salad
  • 4 purple potatoes, washed & large diced
  • ½ head cauliflower, large chunks
  • ½ cup Kimchi
  • 3 tablespoons organic sour cream
  • salt & pepper to taste
  • 1 tablespoon ghee
  • ½ a yellow pepper, slice thin
  • ½ a white onion, slice thin
  • 2 tablespoons chives, chopped
  1. Take a moment to clear your mind and give thanks for this nourishing food
  2. Combine cauliflower & purple potato in large pan with water, bring to boil, lower heat and cook until slightly tender - approximately 15-20 minutes. Drain
  3. In separate skillet, melt ghee and cook the onion and pepper on medium heat until soft and carmelized
  4. Return the cauliflower & potatoes to the large pan and smash roughly with fork. Add sour cream, salt & pepper. I did not totally mash - just a rough smash
  5. Take the onion/pepper mix and place on top of the smash. Finish with chopped chives and a sprinkle of love!
