Fried Purple Potatoes, Eggs, & Kale

DSCN1849_LR My birthday breakfast!  Seeing that it was a special day, I decided to splurge on potatoes for breakfast.  These purple ones are my absolute new favorite and I get super excited when they carry them at the grocery store.  They are so much better than a white or even a red potato – more flavor, a softer texture, and oh so pretty.  I cooked them briefly in water prior to browning them – this speeds the whole process up considerably.  Add chopped kale to the potatoes just prior to serving so it is only slightly cooked.  I prefer my yolk runny so I have some juiciness to work with but do cook your eggs according to personal preference.  I shredded a little organic cheddar on top of the egg and covered for a few minutes to melt.  I served the cheesy egg on top of the fried potatoes and topped with salsa verde.  Best breakfast – and we didn’t even have to leave home!

Fried Purple Potatoes, Eggs, & Kale
  • 2 tablespoons olive oil
  • 7-8 small purple potatoes, washed & large diced
  • 1 cup washed & chopped kale
  • 2 eggs
  • 2 tablespoons organic butter
  • 2 tablespoons organic cheddar cheese
  • Salsa to finish - I prefer a green
  • Smoked salt
  1. Large dice the potatoes, wash well. Bring pot of water to boil and carefully drop in potatoes. Cook for 10-15 minutes - just to soften a bit. Drain well.
  2. In large saute pan, heat olive oil to medium. Add potatoes and season with salt & pepper. Cook on medium high turning frequently to brown. Add kale and cook briefly.
  3. In small pan, melt butter and cook eggs according to preference. Top with cheddar cheese and cover pan to melt.
  4. Divide potatoes between two plates and top each with an egg. Finish with salsa and smoked salt.
  5. Note - smoked salt is amazing! I found it at the Spice Merchants in Saugatuck and at the Nature's Market in Holland. It is worth the extra cost as it adds so much flavor to everything. Especially tasty on salads!
