Holy Guacamole! (and Happy Birthday!)

DSCN2864_LR This guacamole also made a shining appearance at my hubbies birthday dinner on Tuesday.  We don’t eat much guacamole because he is slightly allergic to avocado, but when we do, it is certainly enjoyed!  I bought this mortar & pestle a while back and used it to POUND (very satisfying, this pounding!) red onion, jalapeno, cilantro, lime, and salt into a thick sauce before adding the diced avocado.  Do not completely mash the avocado – leave it a bit chunky.  Along with the avocado, add more diced onion, jalapeno, and chopped cilantro.  Taste for lime and salt.  We served this with blue corn tortilla chips, red & green tomato salsa and dropped a spot on our black bean & zucchini enchiladas

Holy Guacamole!
  • 2 large avocados, diced
  • ½ red onion, diced
  • 1 jalapeno, minced
  • ½ cup cilantro, chopped
  • 1 lime
  • salt to taste
  1. Combine half the onion, jalapeno, cilantro, salt, and lime in mortar (or a bowl if a mortar is not available)
  2. Using the pestle (or fork), pound or smash the heck out of all until a thick sauce is formed
  3. Add the diced avocado, gently smash but leave some chunks
  4. Add the remaining onion, jalapeno, and cilantro. Mix well. Taste for salt and lime
  5. Good food - what a blessing!!
