Vegan Pea Soup

DSCN4501_LR This is the most delicious pea soup EVER!  No exaggeration.  Hard to believe it is totally vegan –  NO ham parts here folks.  The addition of liquid smoke brings on a nice meaty flavor and nutritional yeast adds an amazing cheesy, creamy flavor that is absolutely out of this world.  Seek it out at the health food store or online at Amazon.  I add a lot of veggies including mushrooms, spinach, carrots, potatoes, and onions.  What makes this recipe so convenient is that you cut all the veggies up and toss in a big pan with the rest of the ingredients, bring to a soft boil, reduce heat, and cook on low for 2 hours allowing the ingredients to melt together and explode with outstanding flavor.  No sauteing first or numerous steps to complete.  Simple.  To make a vegetarian version, use butter instead of vegan butter – not a big noticeable difference but if you don’t have any vegan butter, this is a good compromise.  I finished the soup with a dollop of greek yogurt mixed with hot sauce and served with toasted rye bread.  See how much fun Autumn is?  Bring on the soups!

What I LOVE about this soup is the simplicity – combine all the ingredients and cook slowly.  At the end of two hours, you have a fantastic bowl of soup that is unforgettable.

Vegan Pea Soup
 
Ingredients
  • 2 cups split green peas
  • 1 onion, diced
  • 3 large carrot, diced
  • 6 ounces mushrooms, quartered
  • 1 large baking potato, diced
  • 1 bunch spinach, chopped
  • 1 cup nutritional yeast
  • 1 tablespoon vegetable base
  • 8 cups water
  • 2 tablespoons regular or vegan butter
  • ¼ cup apple cider vinegar
  • 3 bay leaves
  • 2 tablespoons vegan liquid smoke
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne
  • 1 tablespoon garlic powder
Instructions
  1. In a large pot, combine all the ingredients and mix well. Bring to a soft boil, reduce heat to low and simmer uncovered for 2 hours stirring occasionally to prevent bottom from burning. It will thicken nicely but if it's too thick for you, do add more water as needed. This soup is so simple and even better the next day.
